Pepperoni pizza is delicious as is sausage but there’s beauty in simplicity. There is something so special about pizza with a homemade sauce, fresh mozzarella cheese, and fresh basil. The basil is aromatic and lends its sweet yet savory taste while the milky cheese develops nice color. As for the sauce, it ties everything together. Buy your favorite refrigerated dough, pick up some basil from the grocery store and get your hands on the freshest mozzarella you can find.

Ingredients

Serves 4

Sauce:

  • 1 – 28 oz. can crushed San Marzano tomatoes
  • 1 – 6 oz. can tomato paste
  • ¼ cup water
  • 4 garlic cloves, minced
  • ½ tablespoon granulated sugar
  • 1 teaspoon dried oregano
  • ½ teaspoon dried basil
  • Pinch of red chili flakes
  • Olive oil
  • Salt, to taste
  • Black pepper, to taste

Pizza:

  • 12 oz. refrigerated pizza dough
  • 4-5 oz. fresh mozzarella cheese
  • ½ bunch of fresh basil
  • All-purpose flour, for dusting

Directions

  1. Drizzle a tablespoon of oil into a medium saucepan.
  2. Heat over medium before adding the garlic.
  3. Cook the garlic while stirring until fragrant.
  4. Add the tomatoes along with the tomato paste and water. Stir.
  5. Bring to a gentle boil and reduce to a simmer.
  6. Add the sugar, oregano, basil, and chili flakes as well as a generous pinch of salt and black pepper.
  7. Cover and leave to simmer for 15 minutes.
  8. Taste and adjust seasonings as needed.
  9. Set aside.
  10. Bring dough up to room temperature.
  11. Preheat your oven to 500 degrees F and place your baking sheet or pizza stone in the oven. It must be hot.
  12. Lightly flour your work surface and roll dough into a 14-inch circle.
  13. Remove the baking sheet or stone from the oven.
  14. Transfer the dough to the sheet or stone.
  15. Pierce the top of the dough with a fork to prevent bubbling.
  16. Spread with the sauce and freeze any remaining sauce for later use.
  17. Slice mozzarella and arrange on top of the pizza.
  18. Quickly chop a handful of basil and sprinkle on top.
  19. Bake for 12-15 minutes or until the crust is brown and the cheese is melted.
  20. Top with whole basil leaves.
  21. Slice and serve.
