Yield for an 8 inch pan 

  • 3 eggs
  • ¼ cup of oil
  • 1 cup of all purpose flour
  • ¼ cup of cocoa poder
  • 1 cup of sugar
  • 1 pinch of salt
  • 3 tbsp of brewed black coffee
  • 150 gr of dark chocolate
  • 1 package of 24 Oreos
  1. First you will have to beat the eggs for around 2 minutes; this is to bring enough air to them so the brownies end with a crispy top after baking. It is easier with an electric mixer but you can also do it by hand, just get ready to do some arms!
  2. Add the sugar and salt, then mix for one minute more.
  3. In a double boiler, melt the chocolate, oil and black coffee, stir continuously until all the mixture is combined. Let it cool down.
  4. When your chocolate is room temperature, add it to the egg mixture and stir well.
  5. Add all of the dry ingredients, cocoa powder, flour and half of you Oreo cookies, chopped. You don’t want to over mix these last ingredients so just fold them into the mixture until is all combine.
  6. Pour your brownie batter into an 8 inch pan, preferably over parchment paper, and add the remaining Oreo cookies on top.
  7. Bake for around 20 min at 350°, DO NOT OVERBAKE, remember we want a fudgy brownie.
  8. Wait for the brownie to cool down before cutting it because if it is too hot when cutting is going to fall apart in chunks.
  9. One good tip to cut brownies, after using parchment paper and waiting for them to cool, is using a plastic knife!
