Frozen Raspberry Pistachio Dessert Recipe

How To Make A Yummy Frozen Raspberry Pistachio Dessert.

Holidays are a time to impress friends and family but it is also a time to enjoy time spent together. Don’t be fooled by appearances- this frozen raspberry pistachio dessert looks like you spent all day slaving over it when in fact it could not be any easier. All of the flavors mix and meld perfectly to create a frozen delight that is sure to impress everyone. Ingredients

  • 2 pints of your favorite high quality vanilla ice cream
  • 1 pint of raspberry sorbet
  • Nonstick cooking spray
  • 1/2 cup chopped pistachios and a handful extra for garnish
  • 1/3 cup raspberry jam, seedless, room temperature
  • 1 cup of fresh or thawed out frozen raspberries
  • Purchased meringues, coarsely broken or chopped

Directions

1. Put sorbet and ice cream out till soft and easy to work with

2. While these thaw slightly, coat a 9-inch loaf pan with cooking spray. Take a piece of parchment paper and cut it down to 9 inches wide and 15 inches long. Lay the paper in the pan and gently crease the corners and fold it over the edge of the pan so it overhangs.

3. Start filling the pan with the softened ice cream and sorbet. Alternate between the flavors and use large and small scoops and randomly drop them in. Now and then use the back of a spoon to gently press the ice cream down and remove any air pockets.

4. As you fill the pan, sprinkle in pistachios and drizzle the jam through each layer you make so they are all throughout the dish. Tap the pan on the counter when done to remove final air pockets and then cover it with plastic wrap.

5. Place pan in the freezer for up to 8 hours until solid- the best thing about this dessert is it can be held in the freezer for up to a week so it can easily be made ahead of time.

6. To serve to your guests, remove plastic covering and run a thin knife or spatula along short ends of pan. Invert and gently pull on the edges of the parchment paper at the same time top slide the frozen delight out onto a chilled serving platter. Make sure you remove paper and decorate with raspberries, additional pistachios and meringues.
