Grilled Citrus Chili Chicken Recipe

Take your BBQ to the next level with this great grilled citrus chili chicken recipe.

Orange Juice and Chili? That’s right; think outside of the juice box when it comes to adding flavor to your next batch of grilled bird. Here’s an easy method for grilling chicken that’s packed with flavor and it works with wings, drums, thighs, breasts, and even tenders!

Here’s the traditional problem many backyard grillers face when they grill chicken – the flavor is brushed on the outside of the bird! Open chicken, toss on grill, baste with some store-bought sauce, turn, baste, turn, sip on beverage, tell a few jokes, baste, turn, repeat, and serve.

The Problem

The problem is that you’re leaving a ton of flavor on the culinary palate floor! You still have the natural juices of the chicken but the added flavor is simply resting on the outside of the chicken. And, if a sauce with too much sugar is used over high heat and scorched then there is a good chance the brushed-on sauce will become scorched with a bitter after taste.

The Fix

The way to fix this grilling flavor mistake is to allow some prep and marinating time. Follow the recipe ingredients below and cover your chicken with the sauce in a covered bowl or even a zip close bag. Next, store and place in the fridge for at least an hour – preferably overnight.

The added time in the marinade allows for the flavor to soak in the fiber of the meat. Marinades for tough meat are designed to break down tissues to make the meat more tender while adding flavor. This method is purely for adding flavor!

In fact – many of my home style recipes for fried chicken include an overnight soaking in buttermilk with a few additional spices. This is very similar. All you’re doing is adding flavor and ensuring juicy chicken!

Citrus and Chili

That being said – this recipe does have a citrus base so the breakdown of tissue will occur. So, if you go for the overnight soak, make sure you move the chicken around a few times.

Finally – Here is a quick and easy recipe for grilled chicken that adds some extra flavor that is different from standard grilled chicken. All you need is some chicken and a few basic ingredients that can be found in just about any kitchen.

The citrus flavor and the smoky warmth of the chili powder make a good combination. You can grill or bake the chicken and use any cut you want– it’s your choice! Hope you enjoy the dish!
