The Poor Man’s Rib Eye! Meet The Chuck Eye Steak!

What the heck is a poor man’s rib eye? It’s a cut of beef that’s often as tender as a rib eye but CHEAPER! And by cheaper – I’m talking about one or two bucks less per pound when compared to a rib eye.

You may or may not find these cuts in your local grocery meat department. Ask your butcher, if they still hand cut in the store, to save you a few.

What is a Chuck eye?

A chuck eye steak is one beef rib away from being a rib eye steak. The rib eye, also known as a Delmonico, is cut from the 6th to the 12th rib. The chuck eye is cut from the 5th rib. It’s a bit smaller and often falls apart into two – three pieces. One important note – it’s NOT a chuck steak.

As mentioned above – these steaks are sometimes hard to find. The reason is that since they are cut from the 5th rib there are only two available per cow! So keep your eyes open for these flavor packed poor man’s rib eye.

Why a Chuck Eye Steak is Awesome!

Well, besides the obvious of being cheaper, and very similar in tenderness and texture to a rib eye, it’s also versatile. You can rub with salt and pepper, use a marinade, flavor with fruit juice such as pineapple, and more. You can grill, pan sear, broil, and even bake. You grill as a single cut or use the natural breaks for steak bites and kabobs.

Here’s probably the easiest grilled steak recipe you’ll ever see besides simply using salt and pepper only. And yes – this method works with all types of steaks, pork cuts, and even various cuts of chicken.

Ingredients

  • Kent’s Marinated Chuck Eye Steak
  • 1 pound Chuck Eye Steak
  • 1/3 cup favorite steak marinade or sauce
  • 1/3 cup your favorite juice. Apple, orange, pineapple!
  • Dash of minced garlic if desired

 

Instructions

  • Place all in a zip close bag and chill for a couple of hours.
  • Grill the steak as you normally would to your desired doneness!

 

This would go great with a side of these amazing mashed potato cheese bites.
