Ingredients

  • 1 pound chopped up milk chocolate
  • 1/2 cup butter
  • 1 9 – ounce package of chocolate wafers
  • 1 cup semisweet chocolate pieces
  • 1 cup of thin sliced almonds
  • 1/2 cup light brown sugar- packed
  • 1/2 cup butter, melted
  • 4 8 – ounce packages of softened cream cheese
  • 8  ounces of sour cream
  • 1/3 cup granulated sugar
  • 1/3 cup buttermilk
  • 4 eggs
  • 2 egg yolks
  • Red food coloring
  • Chocolate leaves (optional)
  • Powdered sugar (optional)
  • Unsweetened cocoa powder (optional)
  • Fresh raspberries or other fruit(optional)

Directions For Crust

1. Using a medium saucepan over medium heat, melt the chocolate in one pan and the butter in another, move to separate bowls and all to cool to room temperature.

2. Place the wafer cookies and along with the chocolate pieces, almonds and brown sugar blend together in a food processor until finely ground. Add the 1/2 cup melted butter and blend in the processor again until well incorporated. Transfer crumb mixture into a 10×3-inch spring-form pan, preferably one that comes with a removable bottom. Press crumbs evenly along the bottom of the pan and halfway up the sides of the pan.

3. Set pan aside and begin working on the filling.

Directions For Filling

1. In a large mixing bowl, combine the cooled chocolate mixture, cream cheese, sour cream, sugar, buttermilk and red food coloring. This is best done with an electric mixer with a medium high to high speed. Blend until combined well.

2. Add 4 eggs and 2 egg yolks all at once into the mix. Beat on low speed only until it is combined- do not over mix at this point.

3. Pour this filling into your prepared crumb-crust lined spring-form pan then place the pan in a shallow baking pan on the oven rack. Bake at 350 degrees F for about one hour or until the outer half of the filling is slightly firm to touch.

4. Remove spring-form pan from baking pan. And allow the cheesecake to cool until it it can be handled. Take a thin metal knife and loosen the outer edge of the cake. Allow to cool for 30 minutes more and then carefully remove sides of pan. Cool for 1 hour more then place in the refrigerator and cool for 4 more hours before serving to your guests.

5. To serve, you can sprinkle powdered sugar or drizzle chocolate sauce on the plate and then dish out the slices. Garnish with chocolate leaves and fresh raspberries or fruit of your choice if you would like.

Tips for Great Holiday Desserts

1. Clean knife between each cut when slicing pie and cake to keep the slices looking neat and professional.

2. Always assume one slice per guest- some people may not eat the dessert but there will likely be those that take seconds.
